Gluten Free Foil Baked Salmon with Red Potatoes Wedges Recipe

Ingredients:

  • 2 salmon fillets (to be cut in 1/2 for 4 servings)
  • 16 asparagus spears
  • 2 pkg red potato wedges (20 oz. each pack)
  • 1 medium white onion, sliced thinly
  • 1 lemon, sliced thinly
  • 1 tsp. dry oregano
  • 1 tbsp. extra virgin olive oil
  • salt and pepper, to taste
  • aluminum foil

 

Directions:

1. Lay out all ingredients.

2. Preheat oven to 400F. Heat olive oil In a medium and start sautéing potatoes. Use low heat since pre-cooked. Season with oregano, salt and pepper. Monitor cooking while you prepare the rest of the recipe.

3. Prepare 4 pieces of aluminum foil and arrange the 4 pieces of salmon and asparagus as shown. Pour 1 tbsp. olive oil and sprinkle salt, pepper and dry oregano.

4. Top with onion slices and season with salt and pepper.

5. Finally top each with 2 lemon slices.

6. Wrap sides of foil inward over salmon, then fold on top and bottom of foil to enclose. Bake in oven for about 15-20 minutes. Make sure you don't overcook salmon and to avoid asparagus from getting soggy.

7. Unwrap and using a large spatula, transfer the foil packets to plates and serve warm with the potatoes on the side. Enjoy./li>
